RECIPES from the Garden


Ingredients for Chili:

  • 1 ½ teaspoons coconut or olive oil

  • 1 cup chopped yellow onion

  • 1 cup chopped green bell pepper

  • 1 cup chopped red bell pepper

  • 4 garlic cloves, minced or 2 T garlic powder

  • 1 pound ground beef or bison

  • ½ pound spicy ground pork sausage

  • 1 tablespoon chili powder

  • 1 tablespoon ground cumin

  • 1 teaspoon dried oregano

  • 1 teaspoon unsweetened cocoa powder

  • 1 teaspoon Worcestershire sauce

  • 3 large crushed tomatoes

  • 1 teaspoon cayenne pepper

  • 1 ½ teaspoons Himalayan pink salt

  • ½ teaspoon ground black pepper

Method for Chili:

1. Cook onion and bell peppers in oil over medium heat until tender. Add garlic and cook until fragrant, about 1 minute.

2. Stir ground beef or bison and sausage into onion mixture. Cook until meat is browned and crumbly.

3. Add remaining ingredients. Bring to a boil, reduce heat to low, and simmer until flavors blend.

4. Enjoy this hearty chili by itself, or garnished with your preferred toppings!

Ingredients for Nachos:

  • Tortilla chips

  • Cheese, such as cheddar, Colby jack, and/or crumbled Cotija

  • Chili

  • Garnishes (optional): cheddar cheese, diced red onion, sour cream, chopped tomatoes, green onions, diced jalapeño peppers, squeeze of lime, parsley or cilantro, Dank Guac or avocado slices, Hot Sauce

Method for Nachos:

  1. Spread a layer of tortilla chips on a plate or platter.

  2. Top with cheese, and broil until lightly melted.

  3. Spread scoops of chili on top of melted cheese, and top with desired garnishes - including more cheese!!

  4. Feast away! Nachos are generally more delicious when shared with friends and/or family.
