Epic Smoothie Bowl Fruit Sundae

Summertime in The Garden of Eden means copious amounts of fresh fruit!! Berry season especial yields an abundant harvest that is best enjoyed or preserved as soon as possible to maintain the vitality of the delicate creatures.

Our smoothie bowls are one of our favorite ways to celebrate summer's prolific produce! Multiple fruit preparations layer in this particular epic fruit sundae to make a creamy "ice cream" base, bright cheery toppings, and a surprising "snow cone" garnish for a truly decadent and boldly nutritious treat at breakfast, snack, or dessert!

Ingredients for smoothie "ice cream" base:

  • Frozen banana chunks

  • Strawberries, blueberries, blackberries, and/or raspberries - frozen berries make the smoothie icier; raw berries make the smoothie creamier

  • Coconut milk or orange juice

  • Spoonful of almond butter (optional)

  • Dash of cinnamon - tastes great and supports blood sugar and cholesterol levels!

  • Pinch of Himalayan pink salt - enhances other flavors, contributes 84 minerals, and balances electrolytes!

  • Dash of cayenne pepper (optional) - a bite of spice can be an unexpected elevation, and it boosts metabolism!

Toppings:

  • Diced mangos

  • Sliced peaches, nectarines, plums, and/or apricots

  • Strawberries, blueberries, blackberries, and/or raspberries

  • Cherries

  • Spoonful of almond butter and/or spiced date spread (optional) - for extra heart health!

Ingredients for "snow cone" garnish:

  • Whole frozen peach or nectarine, peeled mango, and/or peeled pineapple spears

  • Raw honey with terpenes or 100% organic blue agave - adds a bit of sweetness and texture, and both are anti-inflammatory!

  • Nuts & seeds (optional) - pecans, slivered almonds, walnuts, pumpkin seeds, chia seeds, sunflower seeds, and/or hemp hearts

Method:

  1. Gather all ingredients and prep all your room temp or chilled fruit for all layers first, leaving frozen fruits to work with last. If you have everything ready to go, you can quickly assemble to minimize thawing / melting! Make sure to wash and peel anything you want peeled, and dice or slice any fruits you prefer cut.

  2. When components to all layers are prepped, grab your frozen fruit from freezer.

  3. Prepare your smoothie ice cream layer: blend all ingredients in a high speed blender like a Vitamix. Use as much liquid as you like - less liquid will make it thicker and heartier, more can make it much thinner and runnier.

  4. Pour your smoothie ice cream into a bowl.

  5. Top with toppings of choice.

  6. Prepare your snow cone garnish by grating the whole frozen fruit onto your bowl!

  7. Drizzle with honey or agave and top with more toppings, nuts, and/or seeds if desired.

  8. Feast immediately while cold, vibrant, and refreshing!
