White Bean Soup
Mouthgasmic RECIPES from the Garden
This classic soup can be made vegan, vegetarian, or for omnivores! We delight in making a huge pot of steamy soup over the rocket stove's fire in our outdoor kitchen, letting it simmer happily while the veggies soften and flavors meld.

Ingredients:
- Oil
- Butternut squash
- Carrot
- Celery
- Onion
- Potato
- Kale and/or cabbage
- Water or broth
- The ALL Mighty Herbal Medley
- Garlic powder
- Himalayan pink salt
- Cayenne pepper
- Black pepper
- White beans, such as cannellini
- Optional for omnivores: throw in a ham hock
- Garnishes (optional): nutritional yeast, green onions, parsley
Method:
- Sautée onion, carrot, and and celery. Add squash and potato.
- Add water or broth and spices, and a ham hock if you're into meat for depth of flavor.
- Simmer until squash and potatoes are soft. Add beans and greens, and heat through until greens are wilted.
- Top with garnishes and feast away!
