This classic soup can be made vegan, vegetarian, or for omnivores! We delight in making a huge pot of steamy soup over the rocket stove's fire in our outdoor kitchen, letting it simmer happily while the veggies soften and flavors meld.

Ingredients:


Method:

  1. Sautée onion, carrot, and and celery. Add squash and potato.
  2. Add water or broth and spices, and a ham hock if you're into meat for depth of flavor.
  3. Simmer until squash and potatoes are soft. Add beans and greens, and heat through until greens are wilted.
  4. Top with garnishes and feast away!
