Our Summery Succotash made with beans, corn, & squash is a spicy vegetarian dish that can be a side or main star of a meal! Excellent for breakfast, brunch, or dinner!
Ingredients:
- Butter or oil
- Onions, diced
- Bell peppers, diced
- Chayote, zucchini, and/or yellow squash, diced
- Corn kernels
- Cooked beans - kidney, black, lima, and/or pinto
- Garlic powder
- Whole or ground chiles - use Arbol or Yunnan if you like spicy, or Guajillo if you prefer sweeter and milder. Or use a combo of chiles!
- Dried oregano
- Cumin
- Himalayan pink salt
- Ground black pepper
Method:
1. Cook onion, bell peppers, and chayote squash in butter or oil until tender.
2. Add corn, beans, and spices, and cook until heated through and flavors meld together.
3. Serve hot or warm!
