Ingredients for Chili:
- 1 ½ teaspoons coconut or olive oil
- 1 cup chopped yellow onion
- 1 cup chopped green bell pepper
- 1 cup chopped red bell pepper
- 4 garlic cloves, minced or 2 T garlic powder
- 1 pound ground beef or bison
- ½ pound spicy ground pork sausage
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon unsweetened cocoa powder
- 1 teaspoon Worcestershire sauce
- 3 large crushed tomatoes
- 1 teaspoon cayenne pepper
- 1 ½ teaspoons Himalayan pink salt
- ½ teaspoon ground black pepper
Method for Chili:
1. Cook onion and bell peppers in oil over medium heat until tender. Add garlic and cook until fragrant, about 1 minute.
2. Stir ground beef or bison and sausage into onion mixture. Cook until meat is browned and crumbly.
3. Add remaining ingredients. Bring to a boil, reduce heat to low, and simmer until flavors blend.
4. Enjoy this hearty chili by itself, or garnished with your preferred toppings!
Ingredients for Nachos:
- Tortilla chips
- Cheese, such as cheddar, Colby jack, and/or crumbled Cotija
- Chili
- Garnishes (optional): cheddar cheese, diced red onion, sour cream, chopped tomatoes, green onions, diced jalapeño peppers, squeeze of lime, parsley or cilantro, Dank Guac or avocado slices, Hot Sauce
Method for Nachos:
- Spread a layer of tortilla chips on a plate or platter.
- Top with cheese, and broil until lightly melted.
- Spread scoops of chili on top of melted cheese, and top with desired garnishes - including more cheese!!
- Feast away! Nachos are generally more delicious when shared with friends and/or family.
