This soup is packed with vitamin D and full of flavor! It's quick and easy to pull together, tastes great, and is hearty without being heavy.

Method:

  1. Gently heat oil, butter, or bacon fat. Add onions, and cook until soft.
  2. Add mushrooms and sauté for about 5 minutes.
  3. Sprinkle on flour, and stir to make a roux. Cook for a few minutes so your soup doesn't taste like raw flour!
  4. Add broth, milk, and spices. Simmer for 20-30 minutes to desired thickness.
  5. Stir in a dollop of sour cream and lemon juice, and serve hot!
