Citrus French Toast with Kumquat and Mint Marmalade

This bright and festive French toast is dressed up with an impressive yet easy-to-make kumquat and mint marmalade. Decorate the platter with lemon slices and fresh picked flowers for that extra special brunch razzle dazzle!

Ingredients for French toast:
- 8-12 slices of hearty bread of choice
- 6-8 eggs
- 1 cup milk or half & half
- ½ tbsp pure vanilla or almond extract
- ½ tsp cinnamon
- Zest of ½ of a lemon or orange
- 2 tbsp sugar, agave syrup, or honey to desired sweetness
- Pinch of Himalayan pink salt
- 1-2 tbsp butter
Ingredients for Kumquat and Mint Marmalade:
- 2 pounds kumquats, seeds and white center membrane removed (no need to peel)
- 1 cup sugar
- Zest of 1 lemon or orange
- Splash of orange juice
- Pinch of cayenne
- Pinch of Himalayan pink salt
- Handful of mint or chocolate mint
Method for French toast:
- Beat eggs with milk or half and half, vanilla or almond extract, cinnamon, lemon or orange zest, sweetener of choice, and a pinch of Himalayan pink salt to make the custard.
- Soak the bread slices in the custard, flipping once.
- Heat butter in a skillet on medium heat, and fry custard-soaked bread slices on each side until golden brown.
- Serve hot with Kumquat and Mint Marmalade.
Method for Kumquat and Mint Marmalade:
- Mix all ingredients except mint in a pot.
- Simmer over medium heat, stirring often.
- Cook about 30 minutes to desired thickness.
- Serve warm or cold with Citrus French Toast. Store any remaining marmalade in the in the fridge.
