Ingredients:
- Eggs, beaten
- Cumin
- Cayenne
- Garlic powder
- Black pepper
- Parsley
- Paprika
- Himalayan pink salt
- Tortillas
- Rice & beans, leftover or fresh
- Bacon, fried
- Spinach or other greens
- Garnishes (optional): salsa, Dank Guac or avocado slices, sour cream, dried cranberries, diced red onion, sliced cheery tomatoes, crumbled cheese such as cotija, queso fresca, or feta cheese, hot sauce
Method:
- Beat eggs with cumin, cayenne, garlic powder, black pepper, parsley, paprika, and pink salt.
- Cook eggs over low to medium heat, scrambling to desired doneness.
- Heat rice & beans, and set aside to keep warm.
- Heat tortillas gently, and keep covered while you assemble breakfast tacos.
- Add a scoop of rice & beans on top of a tortilla, and layer with scrambled eggs, slice of bacon, greens of your choice, and any and all garnishes you desire!
