
Ingredients:
- Butter or oil
- Chicken breasts, cut into 1 inch cubes
- Himalayan pink salt
- Ground black pepper
- Garlic powder
- Red onion, cut into chunks and separated
- Red, orange, yellow, and/or green bell pepper, seeded and cut into chunks
- Pineapple, peeled, cored, and cut into smallish wedges
- Homemade BBQ sauce (recipe below)
Method:
- Melt butter or heat oil in skillet.
- Season chicken with salt , pepper, and garlic powder. Cook to opaque.
- Add onions, peppers, and pineapple, and continue cooking until almost tender.
- Pour on Homemade BBQ sauce, and simmer for a few minutes to let flavors blend.
- Feast away! Delicious as is or over rice. Leftovers are awesome on pizza!
Ingredients for Homemade BBQ Sauce:
- 1 c Kimchi Ketchup
- 1/4 c Apple Cider Vinegar - our Sipping Blend is milder and sweeter, while the Medicinal blend is more pungent and tart. Either can be used in this recipe!
- 2-3 T brown sugar
- 1/2 t chile powder - grind whole chiles into fine powder! Use Yunnan or Arbol chiles if you like spicy, or Guajillo if you prefer a sweeter and milder flavor - or make your own blend using a mixture of chiles!
- 1 T yellow mustard
- 1/2 t dijon mustard
- 1/2 t ground black pepper
- 1-2 T finely diced onion, or onion powder
- 1 T garlic powder
- 2 T Worcestershire sauce
Method for Homemade BBQ Sauce:
- Blend all ingredients until smooth.
- Use immediately, or store in a jar in the fridge.
