Vegan Cheese Sauce

Ingredients:

1 cup raw, unsalted cashews

3/4 cup vegetable stock

1/4 cup nutritional yeast

1/2 t paprika

Pink Himalayan or sea salt and ground black pepper

Method:

1. Soak cashews in stock overnight.
 
2. Blend all ingredients until smooth and creamy.
 
3. Use to dress your favorite dishes from pasta to roasted veggies, or store in a jar in the fridge to use later.
