BRUSSELS SPROUTS are a delicious and nutritious cruciferous vegetable with low in calories but high in fiber, vitamin K, vitamin C, choline, and omega 3 fatty acids, and they also contain potassium, iron, magnesium, calcium, phosphorous, and B vitamins. They are known to demonstrate anti-cancer effects and to protect DNA!
Brussels sprouts look like teeny tiny cabbages. They grow on a tall, thick stalk that sprouts big edible leaves at the top. It looks like a little palm tree with Brussels sprouts all over the trunk!
Brussels sprouts grow slowly but produce for a long time. They like cool weather and do especially well in foggy climates like those of the Pacific Northwest, although they can grow in many parts of the US. Plant them in early spring or late summer, as they mature nicely in the fall. They like fertile, moist, well-drained soil rich in organic matter with higher than average amounts of boron. They need at least 6 hours of sunlight a day.
Brussels sprouts are recommended for growing in zones 2-10.
Harvest Brussels sprouts from the base of the plant when the tiny heads are 1-2 inches in diameter. They can be twisted right off the plant. They can be harvested up until a hard freeze.
