Vegetable Curry

Mouthgasmic RECIPES from the Garden



1. Heat oil in a deep pot, and add onion. Cook until softened.

2. Add spices; stir until aromatic.

3. Add tomatoes, vegetable stock, coconut milk, vegetables, and chickpeas. Cover, and cook over low heat for 15-20 minutes or until veggies are to desired tenderness.

4. Blend if you like it smooth, or enjoy it chunky!

5. Sprinkle with nutritional yeast and a dollop of yogurt or sour cream. Serve over rice with naan bread.
